Pizza-Home Made-From Scratch


Welcome to another Corona virus induced lock down edition of my blog. I have been working on many recipes but due lack of proper internet, difficulty in getting groceries I am a bit delayed. Still, today I bring you the newest fad in cooking, making things at home from scratch. It essentially means using the least amount of ready made ingredients. I am happy to share my pizza recipe which is easy to make provided you have the basic ingredients. We shall be making the Pizza Base & Sauce also.

2-3 hrs (Including rising time of dough)
Cook Time:
40 mins

Ingredients:
For the Pizza base:
This recipe makes two 10-12 inch medium thick crust Pizza bases.

  1. Refined Wheat Floor (Maida) - 250gm
  2. Dry Active Yeast - 2.5gm
  3. Milk - 100ml
  4. Butter - 25gms
  5. Sugar - 1 teaspoon
  6. Salt -1 teaspoon
For the Pizza Sauce:




  1. Tomatoes - 150 gm
  2. Onions - 100 gm
  3. Garlic - 5-6 cloves
  4. Black Pepper - 2 gm
  5. Red Chili flakes/Powder
  6. Olive Oil
  7. Oregano
  8. Basil - Optional
For the Topping:

  1. Capsicum
  2. Bell Peppers- Optional
  3. Tomatoes
  4. Onions
  5. Beans - Optional
  6. Mozzarella Cheese - 200gm--Or any cheese you can find during the lock down ;) 

Procedure for Pizza Sauce:

  • In a fry pan, take olive oil and heat it up.
  • To the oil, add diced onions, garlic and freshly cracked black pepper corns.
  • Saute till the onions are golden brown.
  • Then add the diced tomatoes, red chili powder, oregano, basil flakes and salt.
  • Cook till the mixture is as mushy as a thick sauce.

Procedure for Pizza Base:
  • Take all of the milk, warm it for 20 secs in a microwave at 800W.
  • Add all the yeast & sugar to the milk and stir well.
  • Wait for about 10 mins till the milk froths as shown in the above pic.
  • If your milk does not froth, then you cannot use that yeast and you must try again.
  • Take the floor in large kneading pan (parat) and add the salt to it.
  • Add the frothed milk & yeast mixture to the floor and start kneading.
  • After a 5 minutes of kneading you will have a sticky mess as shown in above pic.
  • If you dont have a sticky dough then you need to add more milk but never add water.
  • Now add the butter and knead again for 5-10 mins till the stickiness of the dough reduces.
 
  • Scrape off the dough from the kneading pan with metallic scraper or knife.
  • Grease a glass bowl with butter and add the dough to it.
  • Apply butter or water to the dough so that it does not form a skin due to dryness.
  • Cover the glass the bowl with aluminum foil.
  • Now we wait for 45 mins to an hour till the dough rises and becomes twice its original size.
  • After the dough has risen, punch it down and knead it again for about 5 mins.

  • Take a foil sheet and spread half of the dough on it in a circular fashion.
  • Keep flattening the dough till you get round base of about 10-12 inches.
  • Try to the keep the thickness even or it will cause uneven rising of the base while baking.

  • Now preheat your convection oven to at least 200 degrees Celsius for 5-10 minutes.
  • Place the foil paper with the base on a non stick baking pan in the oven.
  • Bake at 200 degrees Celsius for 5 mins.
  • This partial baking will give firmness to the base required to apply sauce and add toppings.

  • Take out the partially baked base from the oven.
  • Apply the previously made pizza sauce generously.
  • Add one layer of grated cheese.
  • Add chopped pieces of Bell Peppers, Beans, Tomatoes, Onions or practically anything you want.
  • Add another layer of grated cheese.
  • Bake again in a preheated oven for another 10 mins at 200 degrees Celsius.
  • Repeat the procedure for making another pizza from the remaining dough.
And you completely home made pizza is ready. Serve while hot by adding himalayan salt, Oregano, Chili & Basil flakes.
