Puran Poli


Puran Poli is a Maharashtrian version of a popular west & south Indian flatbread with sweet filling. It is made from split Bengal Gram & Sugar/Jaggery filling in a roti to make a kind of sweet paratha.
The dish is also called Vedmi in Gujrati & Uppitu in Malayalam & Tamil. Down south, they also use Toor Daal in place of Chanal Daal.
It is said that in Maharashtrian cuisine, Puran Poli is one of the most difficult dish to get right and you must master this dish to be considered a good cook.
My version of Puran Poli is made whilst keeping in mind that the process needs to be as simple as possible.

Ingredients: 
Here I would like to again suggest that you invest in a good kitchen scale to get the proportions right.
This recipe serves 4 persons and ingredients are listed accordingly.
For the Filling:
  1. Split Bengal Gram(Chana Daal) - 200gms
  2. Sugar - 250 gms
  3. Cardamom Pods - 10
  4. Nutmeg Powder - 2 pinches

For the Poli:
  1. Whole Wheat Floor(Atta) - 100gms
  2. All Purpose Floor(Maida) - 100gms
  3. Ghee for roasting
Procedure:
For the Filling:
  • Cook the Chana Daal in pressure cooker till 5-6 whistles or until the grains are completely cooked and turn soft as in above picture.
  • Take a large fry pan and take the cooked Chana Daal & the sugar in it.
  • Cook till all the water has evaporated, all the sugar has dissolved and the mixture looks like a thick paste.

  • To the cooked paste, add ground Cardamom pods and Nutmeg Powder.
  • Now we can grind the paste into a more homogeneous Puran by using a mixer grinder or hand blender.
  • Make sure that all the grains of the chana daal are ground properly.
  • The consistency of the Puran should be the same as the roti dough to make sure that the rotis dont tear while rolling.

For the Polis:

  • Take the atta and maida in a kneading pan(Parat) and add water.
  • Knead in to a dough the consistency of normal rotis.
  • Make 7-8 dough balls from the dough.
  • Divide the Puran into 7-8 balls also.
  • Make a cup out of a dough ball and add the filling.
  • Round up the dough ball again and roll slowly while adding some floor so that the poli does not stick to the rolling pin.
  • Apply ghee and roast on medium flame on a Tava till the Poli is golden brown.
And thus your delicious Puran Polis are ready. Serve hot with ghee.
